Snow Cone Cupcake Recipe

 

 

I found this recipe on the Celebrations website.  I thought this would be the perfect recipe for summer BBQs and fits in perfect with my recipe I just posted for Rhubarb Snow Cones.


What You’ll Need: 

–  Pineapple cake mix or another type of fruit cake mix

–  Cherry flavoured frosting

–  Red, yellow and blue sanding sugar

–  Styrofoam cups

–  Straws

 

What You’ll Need to do:

1.  Take cake mix and make as directed.  Bake in usual muffin/cupcake pan.  After baked, set aside to cool.

2.  After the cupcakes are cooled, smoothly ice cupcakes with frosting.

3.  Pour red, yellow, and blue sanding sugar into three small plates or bowls, to make a traditional snow cone look. You can also top your entire cupcake in a single colour of sanding sugar or even do half and half with two colours.

4.  Roll one side of your cupcake into red sanding sugar, covering 1/3 of your cupcake. Roll the opposite side in blue sanding sugar, leaving a strip of exposed frosting down the middle.

5.  Sprinkle yellow sanding sugar down the middle with a spoon or by hand.  Make sure the entire cupcake is covered with sanding sugars and no frosting is left uncovered.  Repeat with remaining cupcakes.

6.  Finally, place your cupcake in a Styrofoam cup.  Add a straw and/or plastic spoon, if desired.
