Chicken and Sweet Potato Stew Slow Cooker Recipe



Below is a hearty chicken stew recipe which will be sure to keep you warm on the cold days to come.  I found this recipe on the Chicken Farmers website which I have modified slightly.


What You Will Need:

–   4 cups of peeled and cubed sweet potatoes

–   2 cups of chicken (I personally use chicken breast but any preference will do.

–   ¾ cup of diced red onions

–   1 ½ cups of sliced mushrooms

–   4 cloves of minced garlic

–   ½ cup of white wine (or an alternative is to use chicken broth)

–   ¼ tsp of rosemary

–   ¼ tsp of pepper

–   ¼ tsp of salt

–   1 cup of frozen green peas


What You Will Need to do:

1.   Peel and cut the sweet potatoes into small cubes.  Place them in the slow cooker.

2.   Place the chicken on top of the sweet potatoes.

3.   Next, scatter the mushrooms, onions and garlic on top of the chicken.

4.   Now, layer the wine, rosemary, salt and pepper on top.

5.   Cook the contents of the slow cooker for 6-8 hours on low or 3-4 hours on high.

6.   Thirty minutes before the stew is done cooking, place the frozen peas in and continue to cook.
