Southwestern Chicken Scaloppine Recipe



What You Will Need:

–   4 chicken breast

–   ¼ cup of flour

–   1 tsp of cumin

–   1 ½ tsp of canola oil

–   ½ tsp of salt

–   ½ cup of chicken broth

–   2 Tbsp of lime juice

–   ¼ tsp of Tabasco sauce

–   2 Tbsp of cilantro


What You Will Need to do:

1.   Gently pound chicken in order to flatten them.

2.   In a bowl, mix the flour (minus 1 tsp), salt and cumin together.  Once mixed, coat the chicken with flour mixture.

3.   In a saucepan, heat up the oil.  Add the chicken and cook each side of the chicken for about 5 minutes each.  Put the chicken to the side.

4.   In another bowl, stir in 1 tsp of flour to the chicken broth.  Once mixed in together, add the Tabasco sauce.  Bring this mixture to a boil in a saucepan.

5.   When the contents of the saucepan have come to a boil, stir in the lime juice and cilantro.

6.   When everything has mixed together well, pour over the chicken and serve.
