I don’t know what else to say but YUMMY!
What You Will Need:
– ½ cup of shortening
– 1 cup of brown sugar
– ¼ cup of softened butter
– ¼ tsp of salt
– ½ tsp of baking powder
– 1 tsp of vanilla
– 1 egg
– ¾ cup of cocoa powder
– 1 ½ cups of flour
– 1 cup of small semisweet chocolate pieces
– 1 cup of finely chopped almonds
– ¾ cup of Raspberry Ganache
What You Will Need to do:
1. Preheat your oven to 350°F.
2. In a bowl, beat the butter and shortening together. I would suggest using an electric mixer.
3. Add the brown sugar, salt and baking powder and continue to beat ingredients together.
4. Next, beat in the egg and vanilla to bowl.
5. In a different bowl, mix the flour and cocoa powder together. Once mixed well, beat as much of the flour mixture into the butter mixture. Stir in any remaining flour mixture. Stir in chocolate pieces.
6. Shape dough into 1-inch balls. If desired, roll balls in chopped almonds. Place balls 1-1/2 inches apart on an ungreased cookie sheet. Press thumb into the center of each ball to make an indent.
7. Bake in the oven for 8-10 minutes or until the edges are slightly firm. Immediately use the rounded side of a 1-teaspoon measure to press down the center of each cookie. Transfer cookies to wire racks to cool.
8. Spoon Raspberry Ganache into center of each cookie. Let cookies sit for about an hour so everything can set.
