Turkey, Cranberry and Brie Quesadilla Recipe


Still have some leftover in the fridge or freeze from the holidays, here is a great way to use some turkey:


What You Will Need:

For the Quesadilla

–   about 4 cups/1 lb of shredded turkey

–   2 cups of brie

–   8, 8” flour tortillas

–   1 cup of dried cranberries

–   ½ cup of chopped chives


For the Topping:

–   ½ cup of sour cream

–   ½ cup of chopped chives

–   1 tsp of minced garlic

–   ½ cup of lemon juice

–   ¼ tsp of salt

–   1/8 tsp of cayenne pepper


What You Will Need to do:

1.   Preheat your oven to 350°F.

2.   Spread ½ cup of brie over each tortilla and then spread ½ cup of turkey, ¼ cup of cranberries and then 2 Tbsp of chives.  Place another tortilla over top, like making a sandwich.

3.   Place the quesadillas on a baking sheet and bake for 8-10 minutes or until the cheese has melted.

4.   While you`re waiting for the quesadillas to bake, mix all the ingredients for the topping together in a bowl.

5.   Once finished baking, cut into 4-6 wedges, pour topping over top and enjoy!
