Corn Chowder Mac n Cheese Recipe

There is a little more to this recipe than your average mac n cheese but is simply delicious:

What You Will Need:

–   salt and pepper to taste

–   1 package of penne pasta

–   2 ½ cups of corn

–   1 ½ cups of cooked back, chopped up into small ½” pieces

–   2 potato, peeled and cut up into ½” pieces

–   ½ Tbsp of Italian seasoning

–   2 chopped stalks of celery

–   1 finely chopped onion

–   1 chopped red pepper

–   4 chopped cloves of garlic

–   ¾ cup of milk

–   1 Tbsp of thyme

–   3 Tbsp of butter

–   2 Tbsp of flour

–   1 ½ tsp of nutmeg

–   1 tsp of dry mustard

–   ½ tsp of cayenne pepper

–   1 ½ cups of cheddar cheese

–   1 cup of grated parmigiano-reggiano cheese (I’ve also used parmesan cheese)


What You Will Need to do:

1.   Cook pasta as indicated on package. 

2.   In a saucepan, cook the bacon until crisp and place the bacon aside.

3.   While using the drippings from the bacon, add the corn, potato and Italian seasoning and cook for 5 minutes, while continuing to stir.  

4.   Next, add the celery, red pepper, onion, garlic, thyme, salt and pepper.  Cook, stirring occasionally, for about 10 minutes.

5.   In another sauce pan, melt the butter.  Slowly whisk in the flour, milk, mustard, cayenne, nutmeg, salt and pepper.  Cook until the sauce coats a spoon thickly; lower the heat to low.  Stir in the parmigiano-reggiano.  Depending on which cheese you choose, you may need to add more milk.

6.   Now, add the corn-potato mixture and the white sauce to the pasta in the pot and stir together.

7.   Transfer everything to a casserole or serving dish, top with the cheddar and bacon and broil until brown and bubbly which will probably take 5 minutes.  Enjoy!
