Texan Ranch Chicken Casserole Recipe

Here’s a great creamy chicken recipe.  If you like creamy meals, this is one for you:

What You Will Need:

–   1 finely chopped onion

–   2 finely chopped celery sticks

–   1finely chopped green pepper

–   1 finely chopped red pepper

–   1 Tbsp of canola oil

–   1minced clove of garlic

–   3 cups of cubed cooked chicken breast

–   1 can of cream of celery soup

–   1 can of cream of chicken soup

–   1 ½ cups of canned diced tomatoes and green chilies

–   2 cups of shredded cheddar cheese

–   1 Tbsp of chili powder

–   12 corn tortillas, cut into 1-inch strips

What You Will Need to do:

1.   Preheat your oven to 350°F.

2.   In a saucepan, coat with cooking spray and cook the onion, celery and peppers until crispy.

3.   Add the garlic and cook for a few more minutes.

4.   Stir in the chicken, all the soups, tomatoes and chili powder.

5.   Line the bottom of a baking dish with half of the tortilla strips.

6.   Top with half of the chicken mixture and 1 cup cheese.  Continue to repeat layers.

7.   Bake for 30-35 minutes or until bubbly.
