Homemade Chocolate Pudding

If you’re like me, it seems that every time I want to make a treat, like chocolate pudding, we don’t have any in the house. Here’s an easy way to do it at home yourself:
What You Will Need:
– 3/4 cup sugar
– 1/2 cup unsweetened cocoa powder
– 1/4 cup cornstarch
– 1/4 tsp salt
– 2 1/2 cups milk
– 2 tsp vanilla
– 2 Tbsp butter
What You Will Need to do:
1. In a pot, whisk the sugar, cocoa, cornstarch and salt together.
2. Continue to whisk and slowly pour the milk.
3. Now turn the stove to medium heat and continue to stir until the entire surface of the pudding bubbles. Then reduce the heat to low and stir for another minute or so.
4. Remove the pot from heat and stir in the butter and vanilla.
5. Transfer into a bowl and place a piece of plastic wrap directly on top.
6. Refrigerate for about 1 1/2 hours and enjoy!

Tomato Carrot Spice Cake Recipe

This recipe may seem a bit strange as you’re using soup to make cake but it is sure good and so moist.

–   1 tsp vanilla extract

–   3 finely shredded carrots

–   1 cup raisins

–   1/2 cup chopped walnuts

–   1 cup heavy cream

–   2 tsp grated orange peel

–   2 Tbsp orange-flavored liqueur

–   vegetable cooking spray

What You Will Need to do:

1.   Preheat your oven to 350°F.

2.   Spray a cake pan with the cooking spray.

3.   Mix the flour, baking soda, cinnamon, nutmeg and salt in a bowl.

4.   Beat the eggs in a separate bowl.  Then beat in the soup, oil, sugar and vanilla.  Stir in the carrots.

5.   Add the soup mixture to the flour mixture, stirring just to moisten.  Stir in the raisins and walnuts.  Spoon the batter into the prepared pan.

6.   Bake for an hour or until a toothpick inserted in the center of the cake comes out clean.  Cool the cake in the pan on a wire rack for 10 minutes.  Remove the cake from the pan and cool completely on the wire rack.

7.   Stir the cream, orange peel and liqueur in a  bowl.  Beat with an electric mixer on high speed until the mixture is stiff. Serve the whipped cream mixture with the cake.
