Coca-Cola Cupcakes Recipe

I love making cupcakes.  They are relatively easy to make and it seems like at any event, they get eaten up quicker compared to cake as it’s just more convenient to grab one or two.  Here’s a recipe that is always a hit.

I have changed this recipe up before by using Cherry Coke instead of the regular Coke and it is also a yummy treat!

What You Will Need:

–   2 cups of flour

–   2 cups of sugar

–   3 Tbsp of cocoa

–   1 cup of Coca-Cola (or as I mentioned above, try using Cherry Coke)

–   1 cup of unsalted butter

–   1 ½ cups of miniature marshmallows

–   2 eggs

–   1 tsp of vanilla extract

–   ½ cup of buttermilk


What You Will Need to do:

1.   Preheat the oven to 350°F.

2.   In a bowl, combine the sugar and flour.

3.   Now in a saucepan, combine the marshmallows, butter, cocoa and Coca-Cola.  Bring the contents of the pan to a boil on medium heat.

4.   Once the pan is mixed together completely, pour the contents over the bowl containing the sugar and flour and stir together.

5.   In a separate bowl, beat the eggs.  Then stir in the vanilla and buttermilk.  Once all of this is completely stirred together, combine this bowl of contents with the flour mixture.

6.   Now take your cupcake pan and place the liners in the appropriate stops.  Spoon the batter into these liners.

7.   Bake for 15-20 minutes.

8.   Once the cupcakes are cooled, frost with your favourite frosting.  I found that the white, vanilla frosting suits this recipe the best.  To make it extra special, especially if you’re making this recipe with Cherry Coke, I place a maraschino cherry on top of each cupcake.
