Cookies ‘n Cream Mini Cheesecakes Recipe


 

Usually when I think of Cookies ‘n Cream, I think of ice cream but this is a great alternative:

 

What You Will Need:

–   16 crushed Oreo cookies

–   2 Tbsp of melted butter

–   1 package (250g/8oz) of cream cheese

–   ¼ cup of milk

–   2 Tbsp of sugar

–   1 tsp of vanilla

–   1 egg

–   4 Oreo cookies cut into ¼” pieces

–   3 Tbsp of semisweet chocolate chips

–   1 tsp of shortening

 

What You Will Need to do:

1.   Preheat your oven to 325°F.

2.   Line 24 miniature muffin cups with baking cups.

3.   In a bowl, mix crushed cookies and butter.  Press 1 teaspoon cookie mixture firmly in bottom of each muffin cup.

4.   In another bowl, beat cream cheese, milk and sugar with electric mixer until contents become fluffy.

5.   Add vanilla, egg and continue to beat.

6.   Fold in cut-up cookies.

7.   Spoon 1 heaping tablespoon cream cheese mixture into each crust-lined muffin cup.

8.   Bake for 12-14 minutes or until edges are set and centers are still soft.  Cool in pan on cooling rack 30 minutes.

9.   Refrigerate at least 1 hour or up to 48 hours before enjoying.

10.   Before are about to serve the cupcakes, in a microwave safe measuring cup, combine chocolate chips and shortening.  Microwave until contents of cup have melted, stirring once.  Drizzle chocolate over tops of cheesecakes.

Snowballs Cookie Recipe

 

 

Here is another cookie recipe to enjoy during the holidays:

 

What You Will Need:

–   1 cup of softened butter

–   2 ¼ cups of flour

–   ½ cup of confectioners’ sugar

–   ¼ tsp of salt

–   1 Tbsp of lemon zest

–   1 cup of finely chopped walnuts

–   confectioners’ sugar to coat

 

What You Will Need to do:

1.   Preheat your oven to 400°F.

2.   Mix together the butter and sugar.

3.   Next, add the flour, salt, zest and nuts and continue to stir until the dough forms.

4.   Shape the dough into 1” balls and place them on a baking sheet.  Bake for 10 minutes.

5.   Let the cookies cool down a little bit and then roll them in the confectioners’ sugar.

Cocoa-Coffee Crinkles Recipe

Here is one of many cookie recipes that I will be posting for your to make for the upcoming holiday season:

 

What You Will Need:

–   ½ cup of softened butter

–   2/3 cup of unsweetened cocoa powder

–   and 2 Tbsp of unsweetened cocoa powder

–   1 cup of brown sugar

–   1 tsp of baking soda

–   1 Tbsp of instant coffee

–   1 tsp of ground cinnamon

–   2 egg whites

–   1 ½ cups of flour

 

What You Will Need:

1.   In a large bowl, beat the butter with an electric mixer on medium to high speed for 30 seconds.

2.   Next, add the brown sugar, the 2/3 cup cocoa powder, the coffee crystals, baking soda and cinnamon.

3.   Beat until combined, scraping sides of bowl occasionally.

4.   Beat in egg whites.  Beat in as much of the flour as you can with the mixer.

5.   Using a wooden spoon, stir in any remaining flour.  Divide dough in half.  Cover and chill about 1 hour or until dough is easy to handle.

6.   Preheat your oven to 350°F.

7.   In a small bowl, combine granulated sugar and the 2 tablespoons cocoa powder; set aside.

8.   Shape dough into 1-inch balls.  Shape each ball into a 1 1/2-inch log; roll logs in sugar, reserving remaining mixture. Place logs 2 inches apart onto cookie sheets.

9.   Bake for 8 to 10 minutes or until edges are firm.  Transfer cookies to wire racks; cool. Sprinkle cookies with the remaining sugar mixture.

Pumpkin Butterscotch Cookies Recipe

 

These are really moist and delicious cookies that can fulfill many different types of cravings:

 

What You Will Need:

 

–   2 ½ cups of flour

–   1 tsp of baking powder

–   1 tsp of baking soda

–   ½ tsp of salt

–   ½ tsp of pumpkin pie spice

–   ½ cup of butter

–   1 cup of pumpkin puree

–   ½ cup of sugar

–   1 egg

–   1 cup of butterscotch ships

–   1 tsp of vanilla extract

 

 

What You Will Need to do:

 

1.   Preheat your oven to 350°F.

 

2.   Other than the sugar, mix all the dry ingredients together in a bowl.

 

3.   In a separate bowl, mix softened butter and sugar together.

 

3.   Now add the pumpkin, vanilla and egg to the bowl with the butter and sugar.

 

4.   Next, add the dry ingredients to the bowl with the pumpkin mixture.

 

5.   Make little balls with the dough and place on a greased baking sheet.

 

6.   Bake the cookies for about 18 minutes or until the cookies have become golden brown.
