Cookies ‘n Cream Mini Cheesecakes Recipe


 

Usually when I think of Cookies ‘n Cream, I think of ice cream but this is a great alternative:

 

What You Will Need:

–   16 crushed Oreo cookies

–   2 Tbsp of melted butter

–   1 package (250g/8oz) of cream cheese

–   ¼ cup of milk

–   2 Tbsp of sugar

–   1 tsp of vanilla

–   1 egg

–   4 Oreo cookies cut into ¼” pieces

–   3 Tbsp of semisweet chocolate chips

–   1 tsp of shortening

 

What You Will Need to do:

1.   Preheat your oven to 325°F.

2.   Line 24 miniature muffin cups with baking cups.

3.   In a bowl, mix crushed cookies and butter.  Press 1 teaspoon cookie mixture firmly in bottom of each muffin cup.

4.   In another bowl, beat cream cheese, milk and sugar with electric mixer until contents become fluffy.

5.   Add vanilla, egg and continue to beat.

6.   Fold in cut-up cookies.

7.   Spoon 1 heaping tablespoon cream cheese mixture into each crust-lined muffin cup.

8.   Bake for 12-14 minutes or until edges are set and centers are still soft.  Cool in pan on cooling rack 30 minutes.

9.   Refrigerate at least 1 hour or up to 48 hours before enjoying.

10.   Before are about to serve the cupcakes, in a microwave safe measuring cup, combine chocolate chips and shortening.  Microwave until contents of cup have melted, stirring once.  Drizzle chocolate over tops of cheesecakes.
