SMARTIES Cookies Recipe

One of my favourite cookies and I think one of the easiest recipes is Smarties Cookies.  Yum!

SMARTIES Cookies

You will need:

1 cup

butter

1 1/2 cup

brown sugar

2 tsp

vanilla extract

2

eggs

2 1/4 cup

all-purpose flour

1/2 tsp

baking powder

1/4 tsp

salt

1 1/2 cups

SMARTIES candies (about six 50g pkgs)

Step 1: Preheat oven to 375˚F (190˚C). In large bowl, beat softened butter and packed brown sugar with electric mixer until creamy. Beat in vanilla and eggs.

Step 2: Beat in flour, baking powder, and salt.

Step 3: Drop slightly rounded tablespoons about 2-inches (5 cm) apart onto greased baking sheets. Flatten cookies slightly and press 5 SMARTIES into top of each. Bake for 8 to 9 minutes.

Cookie Recipe ~ Lemon Shortbread

 

My father’s two favourite types of treats is anything that has to do with shortbread and lemon.  He absolutely loves these cookies and I’m sure they’ll be a favourite in your family too:

 

What You Will Need to do:

Cookie:

–   1 cup of softened butter

–   ½ cup of confectioners’ sugar

–   ¼ cup of granulated sugar

–   1 tsp of grated lemon peel

–   2 cups of lemon peel

–   1 tsp of salt

Topping:

–   2 cups of confectioners’ sugar

–   3 Tbsp of lemon juice

–   2 tsp of grated lemon peel

–   yellow food colouring

 

What You Will Need to do:

1.   Preheat your oven to 325°F.

In a bowl, cream the butter and sugars until it becomes fluffly.

2.   Beat in lemon peel.

3.   Combine flour and salt, gradually add to creamed mixture and mix well.

4.   Divide dough in half.  Shape each into a ball.  Then flatten into a disk.

5.   Roll out each portion between two sheets of waxed paper to ¼inch thickness.

6.   With a cookie cutter, make desired cookie shapes and place on greased baking sheets.

7.   Bake for about 7 minutes or until the bottoms of the cookies are lightly browned.

8.   While you`re waiting for the cookies to bake, make the topping of the cookies by combining the confectioners’ sugar, lemon juice and lemon peel together.

9.   Once the cookies have cooled down, spread the topping over the cookies.
