Donald’s Just Ducky Cupcakes Recipe

 

 

Below are the instructions on how to make these adorable cupcakes which I found at the Disney website with a few personal changes:

 

What You Will Need:

–   a batch of baked cupcakes of your choosing

–   white frosting

–   yellow fish candies

–   small black jellybeans

–   black icing for decorating

 

What You Will Need to do:

1.   Frost the cupcakes.  With a knife, pull the frosting up into a couple feathery peaks at the top of the head.

2.   For the duck bill, slice a yellow fish candy in half lengthwise.  Then press the two halves into the frosting, separating them slightly, at the very edge of the cupcake top (opposite the feathery frosting peaks).

3.   For the eyes, press two black jellybeans into the frosting.  Use the black decorating icing to pipe on curved eyebrows about 3/8-inche above the eyes.

 

Snickerdoodle Cupcakes Recipe

 

 

Take the great taste of a snickerdoodle cookies and wrap it up in a cupcake:

 

What You Will Need:

For the Cupcakes:

–   2 ¾ cups of flour

–   1 tsp of cinnamon

–   3 tsp of baking powder

–   ½ tsp of of salt

–   ¾ cup of shortening

–   1 2/3 cups of sugar

–   5 egg whites

–   2 ½ tsp of vanilla

–   1 ¼ cups of milk

For the Cinnamon Frosting:

–   6 cups of powdered sugar

–   2 tsp of cinnamon

–   2/3 cup of softened butter

–   1 Tbsp of vanilla

–   3 Tbsp of milk

For Garnishment on Top:

–   2 tsp of sugar

–   ½ tsp of cinnamon

 

What You Will Need to do:

1.   Preheat your oven to 350°F.

2.   Put paper cupcake liners in a 24-sized muffin sheet.  Grease bottoms and sides of cups with shortening and lightly flour.

3.   In a bowl, mix flour, 1 teaspoon cinnamon, baking powder and salt.

4.   In a separate bowl, beat the shortening with a electric mixer.  Slowly add 1 2/3 cups granulated sugar, beating well after each addition and scraping bowl occasionally.  Slowly add egg whites, one at a time.

5.   Now beat in 2 1/2 teaspoons vanilla.  On low speed, alternately add flour mixture, about one-third at a time, and 1 1/4 cups milk, about half at a time, beating just until blended.

6.   Divide batter evenly among cupcake cups, filling each with about 3 Tbsp of batter / two-thirds full.

7.   Bake for about 18 minutes or until toothpick inserted in center comes out clean.  Cool 5 minutes.

8.   Remove cupcakes from pans; place on cooling racks and let cool completely.

9.   Now in another bowl, mix powdered sugar, 2 tsp of cinnamon and the butter with electric mixer.

10.   Stir in 1 Tbsp of vanilla and 2 Tbsp of milk.  Gradually mix in enough remaining milk, 1 teaspoon at a time, to make frosting smooth and spreadable.  Frost cupcakes.

11.   In another bowl, mix garnish ingredients; sprinkle over frosted cupcakes.

Candy Store Cupcakes Recipe

This is a great recipe that I found at the Canadian Living website.  I’ve made a few changes to make this recipe a bit easier.  I think this could be rearranged so that it`s made in to a festive cupcake too.

 

What You Will Need:  

–   Paste food colouring

–   24 gumdrops

For the Icing:

–   1 ½ cups of butter

–   6 cups of icing sugar

–   ¼ cup of whipping cream

–   2 Tbsp of vanilla

For the cupcake:

–   1 cup of butter

–   2 cups of sugar

–   4 eggs

–   2 tsp of vanilla

–   3 cups of flour

–   1 Tbsp of baking powder

–   ½ tsp of salt

–   1 2/3 cups of milk

 

What You Will Need to do:

1.   To make the cupcakes:  in a large bowl, add butter and sugar; beat until fluffy.  Beat in eggs, 1 at a time.  Beat in vanilla.

2.   Whisk together flour, baking powder and salt; stir into butter mixture alternately with milk, making 3 additions of dry ingredients and 2 of milk.  Spoon into paper-lined or greased muffin cups.

3.   Bake in 350ºF oven until cake tester inserted in centre comes out clean, 20 to 22 minutes. Remove from pan; let cool on rack.

4.   To make the icing:  in large bowl, beat butter smooth.  Beat in sugar alternately with cream, making 3 additions of sugar and 2 of cream. Beat in vanilla.

5.   Now, fit piping bag with large plain tip.  Dip blunt end of wooden skewer into food colouring.  Use skewer to paint 2 vertical lines of food colouring opposite each other on inside of piping bag.

6.   Fill bag with icing.  Pipe onto tops of cupcakes.  Top each with gumdrop.

Here is a delicious and easy recipe that I found at the Canadian Living website (with a few personal changes) which will make you never want to buy store bought cake mix again:

 

What You Will Need

Cupcake Mix:

–   1 ½ cups of flour

–   1 cup of sugar

–   1/3 cup of cocoa powder

–   1 tsp of baking soda

–   ¼ tsp of salt

–   1 cup of cold coffee

–   ½ cup of vegetable oil

–   1 tsp of vanilla

–   4 tsp of cider vinegar

Peppermint Icing:

–   1/3 cup of butter

–   3 ½ cups of icing sugar

–   ½ tsp of peppermint extract

–   ½ tsp of vanilla

–   5 Tbsp of powdered/crushed candy canes

 

What You Will Need to do:

1.   Preheat your oven to 350°F.

2.   In large bowl, whisk together flour, sugar, cocoa powder, baking soda and salt.

3.   Whisk in coffee, oil and vanilla; stir in vinegar.  Pour by 1 tbsp into paper-lined mini muffin cups.

4.   Bake in the oven for about 8-10 minutes (test with a toothpick).

5.   Let sit for about 10 minutes to cool down.

6.   For the icing, in bowl, beat butter, icing sugar and salt until fluffy; beat in cream, 2 tbsp at a time, until smooth.

7.   Beat in peppermint extract and vanilla. Beat in 3 tbsp of the candy cane powder.

8.   Pipe or spread onto cupcakes. Sprinkle with remaining powder.
