Sweet Potato and Rosemary Soup Recipe

 

This is an easy recipe but great way to change up the usual, average soup:

What You Will Need:

–   1 minced clove of garlic

–   1 Tbsp of olive oil

–   4 cups of vegetable broth

–   1 cup of milk

–   4 cups of cubed sweet potatoes

–   1 tsp of pepper

–   1 tsp of salt

–   1 Tbsp of rosemary

 

What You Will Need to do:

1.   In a pot, sauté the garlic in olive oil.

2.   Add the broth and sweet potatoes to the pot.  Bring contents to a boil and then let simmer until the sweet potatoes become tender.

3.   Next place the contents of the pot in a blender and blend until everything is smooth.

4.   Pour the contents of the blender back into a pot, turn the heat back on and stir in the milk, pepper and salt.

5.   Once the contents are mixed well, slowly stir in the rosemary and serve.

Maple Sweet Potato Cups Recipe

 

 

This is a great veggie recipe that will be having everyone asking for seconds:

What You Will Need:

–   6 cups of mashed sweet potatoes

–   1/3 cup of softened butter

–   1/3 cup of brown sugar

–   1/3 cup of maple syrup

–   1 tsp of salt

–   3 tsp of grated orange peel

–   ½ cup of sugar

–   4 egg whites

 

What You Will Need to do:

1.   Preheat your oven to 400°F.

2.   In a bowl, stir the sweet potatoes, brown sugar, syrup, butter, orange peel and salt.

3.   Spoon mixture from bowl into individual baking type of dishes.  Then place on a baking sheet.  Place in the oven for 15 minutes.

4.   In a bowl, beat the egg whites until it becomes to foam.  Then slowly add the sugar until it becomes to stiffen.

5.   Take the sweet potato dishes out of the oven.  Spread the meringue that you made in step 4 on top of the individual dishes.

6.   Place back into the oven for another 5 minutes or until the meringue becomes golden brown.

 

 

Sweet Potato Souffle Recipe

Here is a great idea for a side dish to change up the old ones that you usually serve:

 

What You Will Need:

–   3 cups of mashed sweet potatoes

–   3 Tbsp of butter

–   ¼ cup of brown sugar

–   4 eggs

–   ¼ cup of light rum

–   ½ tsp of salt

–   ¼ tsp of cinnamon

 

Ingredients for Topping:

–   1/3 cup of butter

–   1 cup of chopped pecans

–   1 cup of brown sugar

–   1/3 cup of flour

 

What You Will Need to do:

1.   Preheat your oven to 350°F.

2.   Beat the sweet potatoes, sugar, butter, rum, eggs, salt and cinnamon together.

3.   Spray a baking dish with a cooking spray.

4.   Place the ingredients from the bowl into the baking dish.

5.   In a separate bowel, mix the ingredients for the topping of the dish.  Once mixed, pour over the contents of the baking dish.

6.   Bake for about 45 minutes and enjoy!

 

Sweet Potato Casserole Recipe

 

 

Here’s a delicious sweet potato casserole recipe which will have your family begging for more.

 

What You Will Need:

–   4 cups of cubed sweet potato

–   2 eggs

–   ½ cup of white sugar

–   ½ tsp of salt

–   ½ cup of milk

–   7 Tbsp of butter

–   ½ tsp of vanilla extract

–   1/3 cup of flour

–   ½ cup of brown sugar

–   ½ cup of chopped pecans

 

What You Will Need to do:

1.   Preheat your oven to 325°F.

2.   Place the cubed sweet potatoes in a skillet with water.  Cook over medium heat until the sweet potatoes have become tender.

3.   Drain the water from the sweet potatoes and mash them as you would regular potatoes.

4.   In a bowl, mix the sweet potatoes, eggs, white sugar, salt, milk, 4 Tbsp of butter and vanilla together.

5.   Once the contents of the bowl are smooth, pour into a 9×13 baking dish.

6.   In a separate bowl, mix the brown sugar and flour together.  Stir in 3 Tbsp of butter until everything is well mixed.  Next, stir in the pecans.  Sprinkle this mixture on top of the ingredients in the baking dish.

7.   Place baking dish into the oven and bake for 30 minutes.

Sweet Potato Rice Pilaf Recipe

 

 

My family and I really enjoy sweet potatoes and since it’s the time of year where they become quite abundant, I’m looking for great new ways to use sweet potatoes.  I think you’ll enjoy this recipe.

 

What You Will Need:

–   1 Tbsp of olive oil

–   1 clove of minced garlic

–   2 finely diced shallots

–   1 1/3 cups of long grain and wild rice blend

–   ½ tsp of ground cumin

–   ½ tsp of ground turmeric

–   ¼ tsp of salt

–   ¼ tsp of pepper

–   2 2/3 cups of chicken broth

–   1/3 cup of chopped pecans

–   2 large sweet potatoes, chopped in medium pieces

–   2 Tbsp of fresh basil

 

What You Will Need:

1.   Heat the oil in a saucepan.  Add the shallots and garlic.  Cook the contents of the pan until they are softened.

2.   Add the rice, cumin turmeric, salt and pepper.  Continue to stir for a few minutes, until the rice is lightly toasted.

3.   Now, add the broth and let it simmer for about 5 minutes.

4.   Stir in the sweet potatoes and continue simmering until the liquid has been completed absorbed.  This could take up to 15 minutes.

5.   Next, take the pan off the heat and let sit for 5 minutes.

6.   Fluff up the contents of the pan, stir in the pecans and basil and enjoy!
